Hello lovely readers 🙂 How are you all? Are you enjoying this beautiful Autumnal day? Don’t you just love it when the sun is shining in Autumn? Something about seeing those beautiful red, orange and green colours against a blue sky makes me so happy. I don’t get to walk often, but when I do I cherish it. Life can get a little crazy don’t you think?

It’s that time of year again. And the funny thing is I remember I said to myself last year that I wasn’t going to bake my daughter a cake again, but somehow here I am. Whoops!
I think I secretly love baking but find it hard to admit how difficult it is to do around little ones and the demands of everyday life. As you know my daughter is Frozen mad at the moment, so it was an easy decision to attempt a Frozen themed cake.
You’ve heard me say this before, but I am a novice when it comes to decorating cakes. And therefore I was not about to attempt to make any Frozen figures or anything fancy. So I cheated with a cardboard cake topper and some of Kaiya’s Frozen figurines.
I baked a chocolate sponge and nearly over baked it as I was simultaneously trying to put my baby down for a nap. Then I began layering it and covering it in buttercream icing, which I find surprisingly difficult to get straight and smooth. I think I need to do a baking class one day. I opted for a light blue icing but realised the next day it looked quite green, so I covered it again in a deeper shade of blue. Mayhem!

I found some really cool snowflake cutters in Hobbycraft and cut out snowflakes from white fondant icing. Then I painfully added sprinkles one by one with my food styling tweezers and added more around the bottom. I realise it looks quite amateurish but it brought a huge smile to my daughters face, and that’s the only reason I do it.
But again, maybe next year I will leave it to the professionals and buy one. Or maybe not!
