Happy Diwali!

Happy Diwali to all those celebrating πŸ™‚ I hope this new year brings you good health and happiness.

I love Diwali. It’s such a special time of year. Everyone is preparing days in advance by baking and cooking lots of sweet and savoury snacks. People are decorating their homes with rangoli and lighting small divas around the house.

I love reminiscing about Diwali with my family when I was younger. It was extra special back then. There was such a buzz in the house as we got ready for the big day. I remember getting all dressed up as if we were attending a wedding. We would visit family and indulge in Diwali sweets and treats alongside a large spread of vegetable curries, rice and fried fish.

It all feels a little different now. And it’s time to make new memories with my little girls. We like to decorate the house and read Diwali books. We also light divas around the house and do rangoli. This year I decided to make some barfi, an Indian sweet made from milk powder.

But this is no ordinary barfi, this is strawberry ice cream barfi. Yes thats right, strawberry ice cream! It’s a recipe by Sanjana from Sanjana feasts and its completely genius. She’s amazing, be sure to check out her recipes!

Simply meltdown any ice cream flavour you fancy and mix it with milk powder. I added a pinch of cardamom, flaked almonds and a touch of pink food colouring to mine, but you can add what you like.

I think it’s a great idea for a quick last minute bake (technically no baking involved). It tasted delicious and my daughter was very excited to eat an ice cream barfi.
