So I’ve been building up my portfolio and for me that means more cooking! I decided to stick to my roots and cook something from my background. So I thought what does everyone love to eat?
The British tend to love onion bhaji’s so I thought I’d give it a go. I didn’t realise just how easy they are to make. I figured out that the key ingredient is chickpea flour because that gives it a golden crisp coating. And they are best eaten hot off the fryer!
Just mix chickpea flour with water to make a pancake batter consistency, and add salt, turmeric, chilli powder, garlic and ginger paste, green chillies and coriander. And a pinch of baking powder. Chop up the onions into thin strips (about 2-3cm long) and coat it in the batter. And then you are ready to fry! I served it with a cucumber and fresh mint yogurt dip, which cools down the spicy bhaji.
Now I know it’s a bit of a naughty treat, but what’s life without a treat hey?
