Peri Peri Mango and Lime Chicken

Happy new year to you all! Is it too late in January to say this? Apologies! I hope you all had a great festive break and looking forward to what 2025 will bring.

We had a well deserved holiday amongst lots of celebrating with friends and family and eating lots of food! As with the majority of people, we try and start the new year with a fresh start. I don’t believe in giving up everything you love just because its January and that’s what’s expected of us. My version is to always try and be better, but maybe slow down on the chocolate.

I believe healthy food can be exciting and delicious. It can be convenient and satisfy us at the same time. We all live busy lives. Whether its work or family life that keeps us rushing around, I think we all deserve good food.

That’s why sometimes its okay to take a shortcut for tasty food. And rather than ready meals or takeaways (which there is nothing wrong with now and again by the way) I think its great to use products that help us achieve delicious flavour with minimal effort.

I recently tried Mahi’s Peri Peri Mango and Lime Marinade on my chicken and my family and I loved it. I removed the back bone of the chicken and cooked it flat (Spatchcock) simply because I think it cooks faster and the chicken remains juicy, but this is optional. I poured the marinade all over the chicken and placed it in the fridge overnight. The next day I roasted it in a hot oven (200c) for just over an hour. The chicken came out beautifully golden and caramelised. Minimal effort, maximum flavour. It was delicious!

I served it with some sweet potato wedges that I threw in the air fryer for 20 minutes and a side salad. Garnished with some feta cheese, herbs and chillies, we had a delicious peri peri dinner. This is something that I could imagine preparing on a Sunday night for the next day after school/work. I then have leftovers for the rest of the week. Win!

This is the first time I’ve tried Mahi’s products, but it won’t be the last. They have a great range so I look forward to trying a few more. Let me know if you give it a try!
