Who doesn’t love a good pancake? There’s something very comforting about whipping up a pancake batter in the morning and enjoying them with a good cup of tea and a book. Or more realistically, a little chaotic with energetic kids running around, bowls, whisks and flour all over the counter. But its all fun!
I love American fluffy pancakes, but my ultimate favourite is the English pancake. Thin and crispy and ready for whatever you put on them. There are so many different flavour combinations out there, but since I’ve had my little girl, I like to keep things simple. Lemon and sugar (no sugar for my little one) with mixed berries is my go to flavour combo. You can’t go wrong!
I used BBC Good Food’s recipe and it never fails me. I like to whisk the eggs and milk first, and then sift in the flour as its less likely to become lumpy. Cooked gently in some butter until soft in the middle and crispy on the edges. Delicious!
