Happy Pancake Day! I’ve been writing pancake day posts on my blog for a few years now and I seem to always mention that I love English pancakes. And it’s still true, I do! What’s not to love? Thin pancakes that are soft in the middle and a little crispy on the edges, ready for whatever topping you desire.
I took a trip down memory lane and revisited my previous posts. It’s great to see the progress I have made in terms of my photography. I mean just check out my very first pancake day post – what a difference! This was back in 2016 when I was fresh out of college and where I discovered my love for food photography.
After this I created a couple more pancake day posts. I made banana, lime and coconut pancakes and the classic lemon and sugar with fresh berries. It was great to see how I have developed over the years, but certainly not finished. There’s always so much to learn and room for improvement. This is what makes it so fun! What do you think?
Anyhow, back to pancakes! These are all great flavour combinations and ones I go back to time and time again. This year I tried something a little different. I went down a slightly indulgent route and opted for pancakes with Nutella spread, topped with crushed hazelnuts and cherries. Heaven!
This was definitely a treat and is more of an evening dessert than a breakfast. That’s not to say you can’t have it for breakfast, no judgement here! Cherries and chocolate? It was a winning combination for me.
As always, I used BBC Good Food’s recipe for pancakes as they never fail me. I even attempted to flip them and it worked! It’s great fun and good for the abs (because of the laughs not the calories).
