It’s Pancake Day in two days! Have you thought about what pancakes you are going to make? Sweet or savoury? I love English pancakes, they are thin, soft and ready for any filling you want.
I believe there are some foods in life that just make you happy, and pancakes are one of them. I love waking up on the weekend and whipping up a batch for breakfast. Now although there are lots of fillings you can have, my favourite it the good old combination of lemon juice and sugar. Having this takes me back to my childhood and I could eat a whole stack of them.
Classic flavours never fail. Whether its strawberries and Nutella or berries and maple syrup. You can’t go wrong. However sometimes I like to mix it up. Sometimes it’s great to experiment and you might be pleasantly surprised.
This time around I tried banana, coconut and lime pancakes. Oh my gosh it felt like having pancakes in the Caribbean. It was delicious! I served it with a dollop of coconut yoghurt but you can use plain yoghurt too. Simply slice up some bananas, scatter over desiccated coconut and lime zest. This is one to try. My husband absolutely loved it and I am sure you will to.
