Who doesn’t love a grilled cheese sandwich? Oozy, warm and oh so naughty. This sandwich is inspired by my trip to Mumbai, where I tasted the best cheese sandwich ever. It was spicy and indulgent and seeing as I won’t be going back any time soon, I decided to give it a go myself.
This is my spin on it and it was delicious! A great lunch for the weekend. I’ve got a few little tricks to make this sandwich a little more special, and it really is worth it. But don’t worry! It’s a quick and easy recipe, if you can even call it a recipe!
First of all I used regular white bread. Sometimes a girl just needs regular white bread! But you choose whatever bread you like 🙂
Secondly I used three slices of bread for one sandwich. Yes that’s right, three! I know I don’t need three slices but the nice man in Mumbai used three slices so I thought it would be rude not to. Besides, I split the sandwich with my husband to half the calories. Problem solved! A little tip here, put one slice of bread in the toaster to lightly brown, otherwise it will just be soggy in the middle.
Thirdly I grabbed a bowl and put all of my ingredients in it and gave it a mix. Here’s what I put in it:
- grated cheddar cheese
- grilled onions (finely sliced)
- green peppers (finely chopped)
- tomatoes (finely chopped)
- coriander (finely chopped)
- A pinch each of turmeric, ground cumin, ground coriander, chilli powder
You can judge the quantities to your liking, but make sure there’s enough cheese to stick it all together! I grilled the onions in a grill pan first until caramelised, then added them to the cheese mix once cooled. It’s an extra little step that’s worth taking! Trust me.
Assemble the sandwich with one layer of bread, then the filling, then the toasted bread in the middle, more filling and the last piece of bread on top. Are you with me?
Butter (yes butter!) the outside of the sandwich and place in a hot griddle pan. Grill until the cheese has melted and the bread is nice and golden. Serve with some mango chutney if you like and enjoy!! You can thank me later :p
