Chai Spiced Coconut Porridge

We’ve all been told that breakfast is the most important meal of the day, and I agree! I can’t seem to start my day without a hearty breakfast, and porridge is the go to choice. It truly does keep me full until lunch but like anything, I get bored of the same old combinations.

Therefore I decided to try something different. Chai is Indian tea that is made from a blend of spices boiled with tea, milk and sometimes other ingredients such as mint and fresh ginger. So I thought why not put those spices into my porridge? I gave it a go and it was absolutely delicious!

Chai masala can be easily found online but I am lucky enough to have a stash at home that was made by my mother-in-law. It’s a blend of wonderful spices such as cinnamon, cardamom, cloves, nutmeg, ginger and more. Everybody’s recipe is different and can be tailored to your tastes. If you don’t have chai masala you could always use any of these spices you have at home and make your own version. Or if you know any little old Indian women get them to give you some, they are the best at making it in bulk! 😀

I made this porridge with desiccated coconut and topped it with mango, blueberries, flaked almonds and granola. I was in porridge heaven! But you can top your porridge with whatever you please, go crazy! Here’s how I made mine:

Serves 2

Ingredients:

  • 100g porridge oats
  • 2 tbsp desiccated coconut
  • 1 tsp chai spice (or a combination of any spices you have)
  • 1 tbsp honey (or sweeten to your taste)
  • 1 tsp vanilla extract
  • milk of your choice

Method:

  1. Place the oats to a pan and pour enough milk in to cover.
  2. Add the rest of the ingredients and simmer on a low heat for a few minutes, stirring until the porridge is creamy.
  3. Serve with mango, blueberries, flaked almonds and granola, or any toppings of your choice. Enjoy!
