Chorizo Arancini

Risotto is one of our common weekday meals, but I always make too much. Always! So instead of just eating it for lunch the next day, I thought I would make arancini. Arancini is risotto shaped into balls, coated in breadcrumbs and then deep fried. But I didn’t want to deep fry mine so I decided to give them a go in the air fryer, and it worked perfectly!

I always make risotto with the usual base of onions, garlic and stock but I like to change up the combinations. Sometimes I make chicken and mushroom risotto, salmon and peas or anything that I have in my fridge. This time I wanted a spicier version and decided to use chorizo. It was delicious!

I used Gennaro Contaldo’s recipe for arancini and it worked perfectly. However, as I mentioned I put mine in the air fryer after spraying with a touch of oil. Air fryer’s are a great gadget for healthier cooking but if you don’t have one you could always try and bake them.

They were so tasty! The oozy mozzarella in the middle made it indulgent and great as a starter or a light dinner.

I also served mine with a spicy arrabbiata sauce like Gennaro, made with onions, garlic, passata and chilli flakes. I loved the combination of the oozy risotto and a spicy tomato sauce. This is definitely one to try!
