Cajun Salmon, Sweet Potato Fries and Sweetcorn Salsa

Hello lovely readers ๐Ÿ™‚ How are you all? Did you enjoy the weather last weekend? It was so beautiful. Ours was filled with friends, family, parties, food fairs and lots of ice cream ๐Ÿ™‚

Although I feel like I need a day just to recover from the weekend. Life can get so busy can’t it? That’s why I am always looking for quick and easy meals during the week. I always want something tasty but don’t have the time to be cooking anything complicated.

This is one of my go to meals and my family love it. I have well and truly jumped on the air fryer bandwagon. I can’t help it. Everything cooks so quickly in it and comes out perfectly. I have a dual Salter Air Fryer that is so useful because of the two compartments. I cooked my salmon on one side and my sweet potato fries on the other and my dinner was ready in 15 minutes. Naturally this can be made in a conventional oven too.

I simply coated my salmon in Very Lazy Cajun paste (as you can tell from my previous post I am a fan!) with a little extra lime juice and salt and pepper. I tossed my sweet potato wedges in smoked paprika, salt and pepper and a drizzle of rapeseed oil. In the air fryer it goes for 15 mins (the salmon actually went in for about 10 mins so you can time it accordingly) and its ready to go.

To go with it I whipped up a quick sweetcorn salsa which consisted of sweetcorn, cucumber, tomato, red onion, and spring onion. I tossed the veggies in extra virgin olive oil, lime juice, salt and pepper and a splash of red wine vinegar. Delicious!

For me these are the kind of weeknight meals that can be made quickly but are still delicious. My husband and daughter loved it, although my daughter did pick out all of the red onion from the salsa, I should have known really.
